Courgette Fritters


1 cup of pea flour
¾ water
1 tsp salt
1 tsp garam marsala
½ ground cumin

1 finely chopped onion
2 grated courgettes
2 grated carrots
Oil for shallow frying

Mix flour, water, spices, and salt. Allow the batter to sit while the vegetables are prepared.

Heat oil in frying pan. Test heat of oil by dropping in a small piece of vegetable. The oil is ready when it bubbles quickly around the vegetable.
Note: if your oil is hot and bubbling the fritters cook quickly and soak up less oil

Add vegetables to batter and mix thoroughly. Put dessertspoons of the mixture into the hot oil. Turn when golden. When the second side is golden, lift from oil and drain.  Serve hot.

You can play around with different spices e.g. tumeric, coriander, and chilli
