Delta Beans


This can be served as a vegetable for dinner or a lunch.

2 large onions chopped
Handful of green beans
Approx 500g tomatoes
Handful of courgettes
1 egg plant (optional)
1 tsp whole cumin seed
1 tsp salt
1 tsp sugar
Black pepper
¼ c water
3 cloves of garlic
½ c olive oil
Handful of parsley
Grated cheese (optional)

Sauté onions in a frying pan until just turning golden. 

On top of onions put a layer of tomatoes and egg plant if available. Sprinkle with salt, sugar, pepper, cumin, garlic and water.

Cover with a lid and simmer over a low heat for at least 30 mins preferably 45 mins. Check occasionally to see that there is still liquid in the bottom of the pan.

On top of tomatoes put a layer of courgettes and a layer of whole green beans. Replace lid and simmer for 5 – 10 minutes until beans and courgettes are lightly cooked and tender. Sprinkle over cheese. Replace lid for a few minutes until melted. Add chopped parsley.

The tomatoes and the onions form a beautiful, dark sauce making this dish very tasty.
