Potato and Spinach Salad

The yoghurt dressing gives this salad a very fresh flavour. It is also marvellously easy to make.

2 large potatoes cubed, cooked and cooled.
A bunch of finely chopped spinach
A finely chopped spring onion


1 pottle of unsweetened yoghurt
Cucumber chopped
Juice of half a Lemon
Mint finely chopped
¼ tsp of sugar

In a bowl combine all ingredients.

In a serving bowl place potato. Gently toss potato cubes in spinach and spring onion.  Add dressing and combine gently. Decorate with the slices of tomato.
