Summer Lunch

This recipe tastes even better the next day so you can make a batch for a few lunches. This recipe was devised with a Lose Weight and Bloom client who wanted a quick lunch to take to work.

1 onion chopped chunky
2 cloves garlic chopped
1 courgette sliced
1 aubergine sliced
1 kumara diced
Tomatoes cut in chunks
Spinach chopped
1 tbs olives
Cheese of choice  - feta is good in this
Butter / oil for sautéing
Salt and pepper

In a frying pan heat butter and sauté onions till golden. Add all the rest of the chopped vegetables except for the spinach. Stir and cook for a few minutes. Add salt and pepper. Put on lid and simmer for 20 minutes. Take pan off stove put in spinach. Replace lid and let spinach cook in the steam for a few minutes. Add chopped feta.

You can experiment with vegetables and create different flavours.
